Very buttery, and the perfect balance between soft and crunchy. Be sure not to over bake!
- 1 c butter
- 1 cup sugar
- 1 egg
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 3 cup flour
- 1/4 tsp salt
- 1 tsp baking powder
Cream sugar and butter. Add egg and extract.
Mix dry ingredients and add to wet and mix until just combined. You may need to use light hand kneading to finish combining the slightly crumbly dough.
Divide into fourths and roll between parchment paper into 1/3" sheets. Keep sheets within the parchment and they can then be stacked.
Chill sheets for at least 30 minutes.
Working one sheet at a time, cut into shapes, then re-roll leftover dough back into a sheet between the parchment and chill again.
Bake at 375 for 9-10 minutes. Cookies will have a hint of browning on the edges. Let cool on pan for a couple minutes before transferring to a wire rack.
