dinners
- 1 lb green beans (trim the ends)
- 1 medium red onion (color probably doesn't matter much)
- 4-8oz of brown mushrooms
- 2-3 cloves garlic (process with garlic press)
- 32oz beef broth made with boullion cubes or better than boullion
- 3x wright thick cut bacon
- fresh cracked black pepper
- get your beef boullion going in a pot
- cut your bacon into small pieces, throw into a big pot like a dutch oven
- dice your onion, big dices, add to dutch oven
- cooked the onion until transparent and bacon starts to brown (add mushrooms half way in between here)
- when lots of brown fond on bottom and it looks like you've got a decent cook on your bacon, add in the beef broth and deglaze the bottom
- add garlic and green beans
- bring to a boil, then reduce it to a simmer and cook for an hour
- after an hour, eat a bean, keep checking beans every now and then, you dont want them to get too soft (if you think the rest of dinner components might take 20-30 mins, dont let them get as tender)
- when you turn off the heat, add that black pepper
- (optional) add some acid like a little vinegar or a squeeze of lime or lemon
