- 2 c flour
- 1 c sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp cinnamon
- 1 tsp vanilla extract
- 2-3 ripe bananas (approx 1 cup)
- 1/4 c butter, softened
- 1/4 c olive oil
- 3 tbsp milk
- 2 eggs
- 1 1/2 c toasted walnuts
- Toast walnuts. Set aside to fold in.
- Pre-heat oven to 350 F
- Mash bananas, add sugar.
- Mix bananas, eggs, butter, oil, milk, and extract. mix with hand mixer.
- Combine dry ingredients.
- Mix wet and dry thoughly. Do not over beat. batter will be thick.
- Fold in walnuts
- Add more flour if too thin, add more milk if too thick.
- Scrape batter into greased 9x5 loaf pan and spread to edges.
- Bake at 350 F for 50-60 minutes. Check doneness with toothpick.
If using mini-loaf pan, fill each pan 3/4. Recipe makes 4 mini loaves.
