Fresher Pesto Pasta

I dig having pasta and pesto, straight up, for a little snack. It can feel a little heavy, though. Here's a way that I sometimes make it a bit lighter.

  • Cook up a bunch of pasta, drain it. I like noodle-y ones for this.
  • Put the pasta back in the empty pot and turn the heat right down.
  • Mix in a jar of pesto.
  • Throw in a generous handful of halved cherry tomatoes.
  • Put a generous squeeze of lemon over the top.
  • Turn the heat back up and let it heat up for a minute or two.
  • Serve with a big sprinkle of Grana Padano on top. For.. lightness? ¯\_(ツ)_/¯
