I dig having pasta and pesto, straight up, for a little snack. It can feel a little heavy, though. Here's a way that I sometimes make it a bit lighter.
- Cook up a bunch of pasta, drain it. I like noodle-y ones for this.
- Put the pasta back in the empty pot and turn the heat right down.
- Mix in a jar of pesto.
- Throw in a generous handful of halved cherry tomatoes.
