I dig having pasta and pesto, straight up, for a little snack. It can feel a little heavy, though. Here's a way that I sometimes make it a bit lighter.

  • Cook up a bunch of pasta, drain it. I like noodle-y ones for this.
  • Put the pasta back in the empty pot and turn the heat right down.
  • Mix in a jar of pesto.
  • Throw in a generous handful of halved cherry tomatoes.

  • Cook up some pasta and set it aside. I like to use tagliatelle for this.
  • Chop up an incautious amount of garlic, a wodge of smoked mackerel, and a few chillies. Fry them up for a minute or two in some olive oil.
  • Throw in a tin of chopped tomatoes. Get it bubbling, then turn it down to simmer until it thickens up some.
  • Slice up some a handful of chopped black olives, and a handful of capers. Add them to the sauce.

  • Chop up some garlic and a fresh chilli or two.
  • Chop some long green beans into thin little rounds.
  • Mince up some pig (if you don't dig pig, you can use minced chicken, or fairly finely chopped shiitake mushrooms);

  • Take about a duck breast per person and lightly score the skin.
  • Mix some five spice, a pinch of salt, and a pinch of sugar in a bowl. Lay the duck down in it, skin-side down, and let it marinate for an hour (or longer if you can).
  • Cook the duck. Rare works best for this. That means high heat, about 5 minutes on the skin side, about 3 minutes on the other side, and about 5 minutes to rest.
  • Cook up and drain some noodles.
