Freestyle "Borschtsch" (somewhere between polish/russian/pomeranian ;)
with meat:
slices of cheap beef with bones AND marrow, don't cut it!
base:
* carrots, celery, parsley, bay leave, onions, lots of garlic in butter/lard
* slowly cook for an hour or so, keep broth, meat, marrow (!)
cut:
* beet root, carrots, a potato, onions, cabbage
* my freestyle: couple overripe tomatoes, celery sticks
* lots of garlic
* salt, pepper, a little thyme, 2 spoons vinegar
SLOWLY cook! 2-3 hours is perfectly fine!
topping:
* sour cream, dill (a must imho)
tips:
* beet root should dominate
* a slightly sour taste balances the sweetness of the veggies
* freezes extremely well, so make a lot
