with meat: | |
slices of cheap beef with bones AND marrow, don't cut it! | |
base: | |
* carrots, celery, parsley, bay leave, onions, lots of garlic in butter/lard | |
* slowly cook for an hour or so, keep broth, meat, marrow (!) | |
cut: | |
* beet root, carrots, a potato, onions, cabbage | |
* my freestyle: couple overripe tomatoes, celery sticks | |
* lots of garlic | |
* salt, pepper, a little thyme, 2 spoons vinegar | |
SLOWLY cook! 2-3 hours is perfectly fine! | |
topping: | |
* sour cream, dill (a must imho) | |
tips: | |
* beet root should dominate | |
* a slightly sour taste balances the sweetness of the veggies | |
* freezes extremely well, so make a lot | |
