1 cup water | |
1Tbsp active yeast | |
1tsp honey | |
2 eggs, room temperature, slightly beaten | |
1 cup oat fiber | |
2/3 cup ground golden flax meal | |
1 cup vital wheat gluten | |
1/2tsp xanthum gum | |
1tsp salt | |
2Tbsp softened butter | |
Microwave 1 cup of water until it gets between 110 and 120℉. Use a thermometer, be precise. | |
Pour the honey into the water and stir it so it dissolves quickly. | |
Add yeast to the water and give it a quick stir. Let the yeast sit a few minutes. The water will start to get pretty foamy. | |
Pour water/yeast into a mixing bowl and add in the remaining ingredients in the order above. | |
Mix in a standing mixer for 12-15 minutes. | |
Place into a loaf pan. Let stand for 50-60 minutes to rise. | |
Preheat oven to 375℉. | |
Bake for 25 minutes. | |
Let cool. |
