Ingredients | |
1 Chicken Breast or your choice of protien | |
1 Can black beans | |
1 Green Pepper | |
1/2 an Onion, finely chopped | |
Lettuce or Spinach | |
Salsa | |
Salt | |
Pepper | |
Garlic | |
One of the following: Cilantro, Cayenne, Chili Powder, Crushed Red Pepper, Paprika | |
Olive Oil | |
In a Medium saucepan, heat Olive Oil for 1-2 minutes on medium heat | |
Add in finely chopped onion and diced green pepper, cook until caramelized (turning brown but not black) and lightly season with salt and pepper | |
Add in chopped garlic and heat for another minute, if no chopped garlic is available use powdered and do not heat | |
Pour in one can of black beans. Simmer on a low heat while completeing the next steps | |
Cut chicken breast in to thin strips | |
In a frying ban, cook the chicken breast stripes in oil on a high heat until brown | |
Season chicken breast with Salt and paper | |
On a serving dish (plate, bowl, whatever you want) make a bed of lettuce or spinach | |
add a thin layer of the black bean mixture to cover the base | |
add you chicken strips on top and then use as much salsa as you feel necassary | |
If you have rice it would also be a good idea to make some and put it between the beans and chicken |
