- 2 cups high-proof bourbon (I like Knob Creek)
- 1 peach
- a few small fresh thyme sprigs
- Slice peach into eighths
- Put peach slices and thyme sprigs into a mason jar
- Pour bourbon into the jar until peaches are covered (about 2 cups)
- Seal the jar and taste test at 18-24 hours
- If you want it sweeter, you can go 48-72 hours, but I like a little sharpness
- Strain the bourbon into a jar and toss the fruit and herbs
- You'll probably get a little over a cup of infused bourbon depending on how greedy the peaches are
- 3oz peach thyme bourbon
- peach slices and fresh thyme sprigs for garnish
- Stir bourbon in a mixing glass until chilled
- or serve over a large ice cube
- Strain into a glass
- Garnish with thin peach slices and thyme garnish
- You can slap the thyme against your hand a bit before garnishing to wake it up a bit
