- 3x persian cucumbers (~5 inches length) or 1x english hothouse
- ~ 2 tsp rice vinegar
- ~ 1 tsp sesame oil
- salt
- Half the cucumbers lengthwise, thin slice them. Aim for something like 1/16th inch
- Put them in a bowl and salt liberally, ~ 1 tbsp-ish
- Wait 10 minutes
- Rinse with water and strain with a colander
- Squeeze the water out of them with hands in batches, set in another bowl
- Mix with rice vinegar, sesame oil
- Add toasted sesame seeds or furikake, mix and eat
