Cucumber sunomono salad

Ingredients

  • 3x persian cucumbers (~5 inches length) or 1x english hothouse
  • ~ 2 tsp rice vinegar
  • ~ 1 tsp sesame oil
  • salt

Make

  • Half the cucumbers lengthwise, thin slice them. Aim for something like 1/16th inch
  • Put them in a bowl and salt liberally, ~ 1 tbsp-ish
  • Wait 10 minutes
  • Rinse with water and strain with a colander
  • Squeeze the water out of them with hands in batches, set in another bowl
  • Mix with rice vinegar, sesame oil
  • Add toasted sesame seeds or furikake, mix and eat
