- 2 cups (250g) all-purpose flour + flour for the work surface
- ¼ teaspoon (2g) baking powder
- ¼ teaspoon (1g) salt
- 110 g butter, at room temperature
- 1 cup (200g) white sugar
or - 1 cup (215g) xylitol
or - 1 ⅓ cup (255g) erythritol
- 1 egg
- 1 teaspoon (3g) pure vanilla extract
- In a large bowl mix the flour, baking powder, and salt. Set aside.
- In an electric mixer fitted with a paddle attachment, whip the butter and sugar at a medium-high speed, blend until fluffy.
- Add the egg and vanilla extract and mix.
- Add the flour mixture gradually and mix at low speed. Stir until the mixture becomes smooth.
- Wrap in plastic wrap and place the dough in the refrigerator to rest overnight.
- The next day, preheat the oven to 160°C.
- Remove the dough from the refrigerator and wait 5-10 minutes, until it softens.
- Roll out the dough on a sheet of floured baking paper to ~0.6cm thickness.
- Cut cookies using your cookie cutter (tip: dip the cutter in flour to avoid sticking).
- With the leftover dough, knead it into a ball, roll it out and use it again. If the dough is too soft, place it back in the refrigerator for 5-10 minutes.
- Place the cookies in the oven and turn the pan once halfway through.
- Bake until lightly golden on the edges. Baking time 10-18 minutes.
- Let cookies cool on the pan for 5 minutes, then transfer them to a wire rack to totally cool before decorating.
