- 1 block of firm tofu, pressed and drained
- 0.25 cup nutritional yeast flakes
- Black pepper to taste
- 2 tsp. ground cumin
- 1 tsp. dried thyme
- 0.5 tsp. ground tumeric
- 1 tsp. salt
- 3 Tbsp. water
- 2 Tbsp. olive oil
- 3 cloves garlic, minced
- 1 cup chopped baby spinach
- 0.5 cup chopped red peppers
- 0.5 cup chopped green peppers
- Combine spice blend with water in a small cup. Set aside
- Cut tofu block up into small chunks about 1.5cm^3 in size
- Preheat a large pan over medium high heat
- Add Base to pan and saute for about a minute
- Pick up tofu with your hands and squish it through your fingers into the pan to add some entropy to the dish
- Add red and green pepper mixins
- Break up larger pieces of tofu with a fork and stir tofu into Base
- Cook for about 10 minutes while occasionally stirring and scraping pan to saute appropriately
- Add spice blend
- Add nutritional yeast
- Add black pepper to taste
- Add spinach mixin
- Mix to incorporate completely
- Add more water if it seems too dry
- Cook for about 5 more minutes
