Feeds 7 people:
- 3.5lb(?) russet potatoes (such that skinning and quartering fits into the 2 quart pots I have
- 2 tbsp butter
- 0.5 cup milk
- 0.5 tsp salt
- water
- 2 quart pot (e.g., 419-18P)
- potato masher
- Skin potatoes.
- Quarter potatoes.
- Place in 2 quart pot.
- Add water until potatoes are mostly submerged.
- Add salt.
- Cover and bring to a boil.
- Boil for 20 minutes.
- Drain water.
- Remove lid.
- Mash using masher.
- Add butter and milk (while still warm so that the butter can melt).
- Mix the butter and milk into the potatoes using the masher.
