    Step A - Open Steam Console
        Start - Run: steam://open/console

    Step B - Download the depots
        Run "download_depot appid depot manifest", replacing the appid, depot, and manifest with the numbers provided above,
            like "download_depot 976730 976731 3600222516169950408"
For CE, specifically, the commands will be:

        It should now work as it used to, and properly download the depot to C:\Program Files (x86)\Steam\steamapps\content
        Wait for "Depot download complete" from console on both of your depots, there is no progress indicator.

Step 2: Move the old files from all depots together, and into a folder alongside your S8 installation, named something like Halo The Master Chief Collection_S7_depots

Step 3: Create steam_appid.txt next to mcclauncher.exe, put "976730" inside, save and close.
    The game won't launch without this.

Step 3: Run the older version by opening MCC-Win64-Shipping.exe in mcc\binaries\win64 (you can add a non-steam game from your library for convenience)

Step 4: Profit
