The cornbread recipe is easy; it's right off the Alber's Yellow Cornmeal box.
- 1 cup Alber's yellow cornmeal
- 1 cup all purpose flour
- 1/4 cup granulated sugar
- 1 Tbs. baking powder (Not soda)
- 1 tsp. salt
- 1 cup milk
- 1/3 cup vegetable oil (like canola)
- 1 large egg, slightly beaten
Have all ingredients at room temperature. Preheat the oven to 400 F. Grease an 8" square baking pan--cooking spray like Pam works fine.
In one bowl, mix all the dry ingredients. In another combine all the wet ingredients, mixing well (I don't beat the egg separately--just mix it well with the oil and milk).
Add the milk mixture to the flour mixture, combining just enough that all the dry is moistened. Pour into prepared pan and bake 20-25 minutes. A toothpick inserted into the center should come out clean and the bread will have pulled away slightly from the edge of the pan.
Let cool on a rack for about 10 minutes, then loosen the edges, and turn the bread out on the rack to finish cooling a bit more (cuts more easily). Good with honey and butter or plain!
