- 200g dark chocolate, minimum 70% cocoa (https://www.tesco.com/groceries/product/details/?id=258754835)
- 133gr butter
- 173gr sugar
- 200gr ground almonds (https://www.tesco.com/groceries/product/details/?id=254914388)
- 4 eggs (medium size https://www.tesco.com/groceries/product/details/?id=250802613)
- 1 teaspoon baking powder - optional
- 1 or 2 spoons brandy or liquor - optional
- cocoa powder (https://www.tesco.com/groceries/product/details/?id=250610609)
- icing sugar
- Grease a 23cm tin (https://www.tesco.com/groceries/product/details/?id=274518245) with butter and then dust it with the cocoa powder so the cake will not stick
- In a sauce pan melt together the chocolate, the butter and the sugar
- Let the mix cool down to lukewarm and put it in a mixing bowl along with the ground almonds and the baking powder
- Beat it until all is mixed well
- Add the teaspoons of brandy/liquor and mix
- Separate yolks from white
- Put the yolks in the mixing bowl and whisk
- Using an electric whisk, beat the egg whites in a large, clean glass bowl until stiff peaks form (the white render better if they are cold from the fridge)
- Fold into the almond and chocolate mixture, with a gentle movement from bottom to top
- Spoon into the prepared tin and level out the top
- Bake for 35 minutes at 180°C (I do 160°C for 1 hour)
- Let it cool a little bit, then moved it to a plate and cover with icing sugar
