Torta caprese / Caprese cake

Method

  • Grease a 23cm tin (https://www.tesco.com/groceries/product/details/?id=274518245) with butter and then dust it with the cocoa powder so the cake will not stick
  • In a sauce pan melt together the chocolate, the butter and the sugar
  • Let the mix cool down to lukewarm and put it in a mixing bowl along with the ground almonds and the baking powder
  • Beat it until all is mixed well
  • Add the teaspoons of brandy/liquor and mix
  • Separate yolks from white
  • Put the yolks in the mixing bowl and whisk
  • Using an electric whisk, beat the egg whites in a large, clean glass bowl until stiff peaks form (the white render better if they are cold from the fridge)
  • Fold into the almond and chocolate mixture, with a gentle movement from bottom to top
  • Spoon into the prepared tin and level out the top
  • Bake for 35 minutes at 180°C (I do 160°C for 1 hour)
  • Let it cool a little bit, then moved it to a plate and cover with icing sugar
