- 2 5/8 C brown rice flour
- 3/4 C regular rolled oats
- 2 t baking soda
- 3/4 t baking powder
- 3/4 t salt
- 1 1/2 t xanthan gum
- 3/8 C (3/4 stick) butter
- 1/2 C virgin coconut oil
- 3/8 C sugar
- 1 1/8 C packed brown sugar
- 3/4 C packed sweetened shredded coconut
- 1 1/2 t vanilla
- 3 eggs
- 12 oz chocolate chips
- 1 1/2 C chopped walnuts
Whisk first 6 ingredients until thoroughly mixed. Beat butter, coconut oil, sugars, and vanilla. Add eggs and beat until even consistency. Add coconut, then dry ingredients. Stir in chocholate chips, then nuts.
Press dough onto ungreased cookie sheets, forming 4 dozen flattened balls. Bake at 375 F for 8.5 to 9 minutes. Cool for 3 to 4 minutes, remove cookies from sheet, cool another 10 minutes, store in airtight container.
