Instructions

  1. Cook the spaghetti in a pot of boiling water until al dente.
  2. In a large skillet, saute the onion, carrot, celery, and garlic in olive oil until tender.
  3. Add the red wine and cook until reduced by half.
  4. Add the tomato paste and tomato sauce and cook until thickened.
  5. Add the milk and heavy cream and cook until thickened.
  6. Add the cheeses and cook until melted.
  7. Add the spaghetti and toss to coat.
  8. Serve immediately.
