Guac

Guacamole

2 avocados
½ tsp kosher salt
several grinds of black pepper
2-3t fresh lime or lemon juice 
1 roma tomato, chopped
¼ finely chopped onion (i prefer red)
4T chopped fresh cilantro leaves
1 jalapeno, seeded/deveined  (1 chipotle or serrano are 2nd/3rd choices) 
-I start with ½ the chili and give it a try til the heat is right

Cut avocado in half and remove the seed.
Scoop out from skin and gently mash with fork.
Add all the above into bowl and stir until desired consistency is reached.
Cover with plastic wrap pressed directly on top of bowl until serving.
