A work-in-progress Nitsuke recipe
  • 1/4 c. soy sauce
  • 1/4 c. sake
  • 1/4 c. mirin
  • 3/4 cup dashi
  • 1 tbsp thinly sliced fresh ginger
  • 1 tsp minced fresh garlic
  • 1 tbsp chopped scallion
  • 1-2 lbs. fish
  1. combine soy sauce, sake, mirin, honey, and dashi in a wide skillet and bring to a boil
  2. lower heat to medium-low; add ginger, garlic, and scallion and simmer for 5 minutes
  3. add fish and simmer until done, turning fish once and ladling sauce over fish every minute
