- 1/4 c. soy sauce
- 1/4 c. sake
- 1/4 c. mirin
- 3/4 cup dashi
- 1 tbsp thinly sliced fresh ginger
- 1 tsp minced fresh garlic
- 1 tbsp chopped scallion
- 1-2 lbs. fish
- combine soy sauce, sake, mirin, honey, and dashi in a wide skillet and bring to a boil
- lower heat to medium-low; add ginger, garlic, and scallion and simmer for 5 minutes
- add fish and simmer until done, turning fish once and ladling sauce over fish every minute
