Time: 50 minutes
Serves: 4-6
- 1 onion (white or yellow, I used 1/2 of a large white onion)
- 2-inch piece of fresh ginger
- 3 cloves of garlic
- 1.5 lbs chicken meat
- 1 Tbsp garam masala
- 1/2 tsp turmeric
- 1 tsp cumin
- 2 tsp paprika
- 1 tsp salt (x2)
- 3 Tbsp cooking oil (I used olive)
- 1 Tbsp tomato paste
- 1 Tbsp brown sugar
- 1 (28oz) can of crushed tomatoes
- 3/4 cup heavy cream
- 2-4 jalapenos to taste (optional)
- fresh cilantro for garnish (optional)
- Peel and dice onion
- Grate enough ginger for 2 tsp
- Smash, peel, and mince garlic and set aside with onion and ginger
- Cut chicken into 1-inch chunks
- Mix chicken with garam masala, turmeric, cumin, paprika, and 1tsp salt until coated
- Heat oil on medium heat in a cooking pot
- Add onion, ginger, garlic, (and diced jalapeno if you like) and 1 tsp salt to oil and cook until onions are soft (7-9 min)
- Add tomato paste, brown sugar, and chicken and cook for 5 minutes stirring occasionally
- Add crushed tomatoes and mix well
- Simmer on low for 10 minutes
- Remove heat and stir in cream
- Sprinkle 2 Tbsp minced cilantro on top (optional)
No, the chicken cooks most of the way at step 8 and then stews for all of step 10. Be sure it comes back to a boil before the 10min and mix well.
