Rosca de polvilho | |

Ingredients: | |
- 2 eggs | |
- 500g tapioca flower | |
- 1/2 cup vegetable oil (I use sunflower seed oil) | |
- 1/2 cup milk | |
- 1 cuc boiling water | |
- 1 teaspon salt | |
Preparing: | |
- Place half of the tapioca flower in a mixing bowl | |
- Add salt, eggs, oil and milk | |
- Mix it ultil homogeneous | |
- Add the boiling water and mix it in | |
- Add the remaining tapioca flower and mix it again (lots of mixing here) | |
- The dough should be very wet and soft, but not too runny | |
- Place the dough in a large baking tray (with high walls); see the video to get the idea | |
- Place it in the oven on high/broil | |
- After about 20min, or when it starts to look golden brown on the top, turn off the broiler | |
- Keep it in the oven for another 20min | |
- Take it out of the tray and place on a cooling rack | |
- Serve still warm; | |
- I like it on its own, some people love adding jam and/or nata (milk cream) to it. | |
