Hayes (Grandma Aguilar) Family Stuffing

Ingredients: | |
3-4 cups of coarse bread crumbles (best made using stale bread that's been left out for 1/2 week) | |
2 cups chopped onion | |
1 cup finely chopped celery | |
1lb cheap, high-fat sausage meat -- think Jimmy Dean breakfast sausage | |
1-2 cups chicken broth | |
1/2-1 stick of butter | |
1 1/2 tsp sage | |
1/2 tsp thyme | |
Instructions: | |
* In a large pan, brown and crumble sausage. Remove sausage, leave fat. | |
* Add butter to pan. | |
* Add onions and celery. Cook until translucent; 5-10 minutes on high heat. | |
* Remove heat. | |
* Combine onion-celery mix, sausage, bread, and spices. | |
* Slowly mix in chicken broth until the mixture becomes sticky/cohesive. You don't need to put in all the broth, just enough to get the right texture. | |
* Stuff turkey with stuffing. Leave a little bit of space at the top of the chest cavity unless you want an explosive experience. | |
* You can also bake this stuffing separately in a baking tray @350F. Bake until top layer is crispy and the flavors have mixed. | |
