Hayes (Grandma Aguilar) Family Stuffing
Ingredients:
3-4 cups of coarse bread crumbles (best made using stale bread that's been left out for 1/2 week)
2 cups chopped onion
1 cup finely chopped celery
1lb cheap, high-fat sausage meat -- think Jimmy Dean breakfast sausage
1-2 cups chicken broth
1/2-1 stick of butter
1 1/2 tsp sage
1/2 tsp thyme
Instructions:
* In a large pan, brown and crumble sausage. Remove sausage, leave fat.
* Add butter to pan.
* Add onions and celery. Cook until translucent; 5-10 minutes on high heat.
* Remove heat.
* Combine onion-celery mix, sausage, bread, and spices.
* Slowly mix in chicken broth until the mixture becomes sticky/cohesive. You don't need to put in all the broth, just enough to get the right texture.
* Stuff turkey with stuffing. Leave a little bit of space at the top of the chest cavity unless you want an explosive experience.
* You can also bake this stuffing separately in a baking tray @350F. Bake until top layer is crispy and the flavors have mixed.
