Here is an enhanced version of the Shish Kebab recipe using Impossible Sausage with a more robust and flavorful marinade:

Ingredients:

  • 1 pack of Impossible Sausage (ground)
  • 1 large bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 pint cherry tomatoes
  • Wooden or metal skewers

Marinade Ingredients:

  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons Worcestershire sauce (vegetarian version if needed)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or maple syrup
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)

Instructions:

  1. Prepare the Sausage:

    • If using ground Impossible Sausage, form it into small meatballs about 1-1.5 inches in diameter. If using pre-formed sausage links, cut them into 1-1.5 inch pieces.
  2. Make the Marinade:

    • In a bowl, whisk together olive oil, soy sauce, balsamic vinegar, lemon juice, Worcestershire sauce, Dijon mustard, honey or maple syrup, minced garlic, smoked paprika, ground cumin, dried oregano, black pepper, and cayenne pepper (if using).
  3. Marinate the Vegetables:

    • In a large bowl, combine the bell pepper, red onion, zucchini, and cherry tomatoes. Pour half of the marinade over the vegetables and toss to coat thoroughly. Reserve the other half of the marinade for the sausage and basting.
  4. Marinate the Sausage:

    • Place the sausage pieces in a separate bowl and pour the remaining marinade over them. Toss gently to coat.
  5. Assemble the Kebabs:

    • Thread the sausage pieces, bell pepper chunks, onion chunks, zucchini slices, and cherry tomatoes onto the skewers, alternating between sausage and vegetables for a balanced kebab.
  6. Preheat the Grill:

    • Heat the grill to medium-high heat. If you don’t have a grill, you can use a grill pan on the stovetop or preheat the oven to 425°F (220°C) and use a broiler.
  7. Grill the Kebabs:

    • Place the kebabs on the grill and cook for about 10-12 minutes, turning occasionally and basting with any remaining marinade, until the vegetables are tender and the sausage is browned and cooked through. If using a grill pan, cook on medium-high heat, or if using the oven, place the kebabs on a baking sheet and broil for about 10-12 minutes, turning halfway through.
  8. Serve:

    • Remove the kebabs from the grill and let them rest for a few minutes. Serve hot, garnished with extra parsley if desired.

This enhanced marinade adds a deeper and more complex flavor to your Shish Kebabs, making them even more delicious and satisfying. Enjoy!
