  • 2x 750mL bottles of Everclear
    • Makes 2.8L at 80 proof, using up 2 bottles of Everclear
    • 2 bottles of Everclear, 151 proof
    • 38 lemons
    • 4.25 cups sugar
    • 623 mL water
  • 1x 1750mL bottle of Everclear
    • Makes 3.3L at 80 proof, using up 1 1.75L bottle of Everclear
    • 44 lemons
    • 1 1.75L bottle of Everclear
    • 5 cups sugar (1kg)CD
    • 826 mL water

Procedure

  • Mix Everclear and lemon zest
  • Steep >= 45 days
  • Strain, then filter
  • Mix with cooled syrup
  • Let rest another 45 days.
