This dish is something i made up after seeing a pack of asparagus/onion/mushrooms for sauteeing at trader joes and didn't want to spend that much on it.
Serves 6
##Ingredients
- 20 stalks of Asparagus
- 1 medium purple onion
- 1 package crimini mushrooms
- 2 tablespoons minced garlic
- 5 pack of chicken apple sausage (optional)
- 1.5 cups rice
- 1 + 1 tbsp virgin olive oil
- 6 eggs
- salt, to taste
- pepper, to taste
- chop the asparagus at the bottom, discard. Chop the remaining asparagus into about 1 inch pieces, and place in a big bowl (you're gonna put all the veggies in there for a lil bit).
- wash the mushrooms, drain. slice the mushrooms (if they already are not), and place in the bowl.
- slice the onions, place in a bowl.
- start to prepare the rice according to directions on your package, but in general, white rice works like this: add 3 cups of water to the 1.5 cups of rice in a saucepan, put on the stove. turn on high. when it starts to boil, turn it down to medium, cover up the rice, and cook for 16-18 minutes. when done, fluff the rice with a fork.
- while the rice is cooking, chop the sausages into 1/3" pieces and, using 1tsp of olive oil, fry in the pan until brown. set aside.
- add another 1tbsp of olive oil in the same pan, take the mixed veggies in the bowl and dump them into the pan, and sautee for about 15 minutes, stirring in the garlic, salt + pepper at about 5 minutes. add the sausage, and cook for another 5 minutes. you basically want the asparagus to soften some.
- i use the same pan to fry the eggs, so dump your cooked food into a serving bowl. fry the eggs using olive oil, sunny side up.
layer the food on the dish:
- rice
- asparagus mixture
- egg on top
