Grain

  • Yellow Corn Flakes 0.8° L 14 lbs (6.35 kg)
  • Rye Malt 2.3-3.8 4 lbs (1.814 kg)
  • Rahr American 2 Row 1.7-2.0 L 4 lbs (1.814 kg)

Brew Day (~4hrs)

  • bring 28.5L of water to boil
  • add grain
  • bring back to boil
  • watch for protein break
  • boil 1hr
  • sparge for 1-1.5hrs maintaining temp at 75-80c
  • drain through heat exchanger into primary fermenter (two buckets to move it to basement)
  • aime for 1.096 OG (adding water to calibrate)
  • add lemon or citric acid to get to 5.77 PH
  • pitch yeast

Rerack

  • syphon from primary to carboys

Distilling Day

  • setup distillery the day before (one segment shorter than tallest) (lock cupboard overnight)
  • fill boiler with water
  • bring to temp
  • collect product

Stopped for dinner and walk, started 7. Brought to boil, no foaming, boiled 15min, tidied up (more work tomorrow), and saran wrapped hot wort on primarily fermenter in basement at 8:45
