Set oven to 375°F. Grease the bottom and sides of an 8×4×2-inch or 9×5×3-inch loaf pan; set aside.

In a large mixing bowl, stir together:
- 2½ cups flour
- 2 tbsp sugar
- 2½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp dried oregano, crushed
- ½ tsp dried basil or marjoram, crushed

Then add:
- 1 cup shredded cheddar cheese
- a bottle of beer (around 12 oz.)
- (optional) 1 tbsp chopped, seeded fresh jalapeño pepper
Stir just till combined. The batter should be lumpy.

Bake in prepared pan at 375°F for 35-40 minutes or until a toothpick comes out clean. Cool in the pan on a wire rack for 10 minutes, then remove. Serve warm with lots of butter.
