To Make Cheese Sauce

I usually make 2 lbs of medium - large shells.

For every lb. of pasta:

  • 1 1/2 cups milk

  • 1 1/2 tbsp. flour

  • 1 1/2 Tbsp. unsalted butter - very important you use unsalted butter throughout

  • 1 1/2 cups shredded cheese

  • Melt butter over low heat in a large pot.

  • Slowly add flour stirring constantly, mix thoroughly to make a roux.

  • Slowly add milk keep stirring.

  • DO NOT LET THE MILK BOIL. It will still taste the same but it will look gross and have a grainy texture.

  • Once all milk is added add in cheese.

  • Keep on low to medium heat until all cheese has melted into milk stirring occasionally.

  • Do not burn this or wait to wash it. This stuff is pain to get off.

To make Buffalo Chicken:

I usually use 1.8 - 2 lbs of chicken. Boneless skinless breast is the easiest. This takes the longest so start it first. Smaller pieces of chicken will cook much faster.

  • Start by cleaning the chicken breasts and grilling just so the are cooked all the way through. No need to season.
  • It doesn't matter if they are slightly pink tn the middle they will be cooking for a while in the hot sauce.
  • Make the sauce by emptying a bottle of Frank's Red Hot Buffalo Sauce into a sauce pot. How much you will need depends on how much chicken/shape of the pot.
  • Melt unsalted butter into the sauce taste. You can also use chicken stock to cut down on the heat as well but you will still need butter to help it stick to the chicken.
  • Don't use to much butter or chicken stock as the cheese sauce will also cut down on the heat when you mix it.
  • Add the chicken to the sauce. It should be mostly if not completely submerged.
  • Simmer on a low until chicken is soft enough to shred with a spoon or fork. This could take anywhere from an hour to 3 hours depending on how much and how big the pieces of chicken are.
  • Breaking the chicken up with a spoon as it cook helps to make it cook faster/soak up more sauce.
  • Preheat oven to 450

Baking

  • Mix everything together in a large pot. This is the point you should add salt/pepper should you feel necessary. The hot sauce is pretty salty so it's usually not necessary.
  • Pour into a baking tray. Be careful this stuff is hot and will stick to you like napalm.
  • Sprinkle more cheese and panko/breadcrumbs on top. I like to put blue cheese crumbles on top too if the store has them.
  • Bake until the top is golden brown and crunchy. This will be the best part.
  • This will be as fuck when it comes out of the oven.
  • The middle will stay hot until the heat death of the universe so let it cool for a while before eating.

You can use heavy cream instead of milk if you don't give a fuck about your health.
