Chicken Tikka Masala
- 1.5-2 lbs of boneless skinless chicken breasts (or thighs if you prefer)
- 1 large onion, diced
- 4 cloves of garlic, minced
- 2 tbsp. fresh ginger, minced (sub 1/4 tsp of ground ginger if needed)
- 1 28 oz can of tomato sauce
- 1 14oz can of diced tomatoes (drained)
- 2 tbsp of tomato paste (or just one whole small can)
- 2 tbsp. olive oil
- 2 tbsp. Garam masala
