Setup a k3s kubernetes cluster using Multipass VMs

this command sed -i '' "s/127.0.0.1/$IP/" k3s.yaml fails in linux.

Instead, just use this sed -i "s/127.0.0.1/$IP/" k3s.yaml this will work.
