Recipe for sugar-free hot cocoa mix.

Sugar Free Hot Chocolate (v1.4)

Amount Ingredient
1/2 cup Baking cocoa powder
1/2 cup Dutch cocoa powder (alkali-processed)
3 tbsp Cornstarch
1/4 cup Maltodextrin
1/4 cup Dry milk powder
1/2 cup Erythritol (or substitute xylitol, sorbitol)
6 tsp Aspartame (or substitute saccharin, sucralose, etc.)
1/4 tsp Monosodium glutamate (optional)
1/4 tsp Potassium acesulfame (optional)
3/4 tsp Sea or kosher salt (fine)
3 tbsp Soy or sunflower lecithin
3 tbsp MCT (coconut or palm oil) powder
1/4 tsp Guar gum
3/4 tsp Xanthan gum

Notes:

  • Combine all ingredients using sifter, blender, or food processor

  • Add 1-2 tbsp mix to 1 cup milk (3 for thicker European style)

  • Increase milk powder to 1-2 cups to mix with water instead of milk (not recommended)

Alternative Recipe (with more available ingredients) Not Tested

This recipe has most of the ingredients above (although not exactly the same amounts) but using products available at a grocery store).

1 large pkg Sugar-free chocolate or fudge pudding mix
1/3 cup Dry milk powder
1/4 cup Non-dairy creamer powder
1/2 cup Erythritol (or substitute xylitol or sorbitol)
6 packets Sweet & Low, Equal, or Splenda
3/4 tsp Sea or kosher salt
1–2 scoops Protein powder
1/4 cup Coconut milk or cream powder (optional)
