Masa pizza con MM | |
Les dejo la receta para hacer una rica masa de pizza con masa madre. | |
La fórmula es: | |
100% harina 000 | |
62% agua | |
2% sal | |
0.5% levadura | |
1.1% aceite de oliva | |
10% MM | |
Incorporar al agua la levadura y la MM. Disolver. Agregar la harina y comenzar el amasado. Sumar la sal y luego el aceite. Amasar hasta lograr una masa bien tersa. | |
Dejar fermentando a temperatura ambiente por unas dos horas. Luego llevar a frío por 24 horas. | |
Retirar de la heladera unas 2 horas antes de usar. |
