A recipe from The Starving Artist's Way by Nava Lubelski. Combines off-the-shelf ingredients in strategic ways to make a delicious curry.
- 1/2 onion, diced
- 2-3 cloves of garlic, chopped
- 2-3 teaspoons of chopped fresh ginger
- 1 tblsp olive, coconut, or sesame oil
- 1 red bell pepper, diced
- 2 cups chopped brocolli
- 10-12 mushrooms, chopped
- 1 zucchini, chopped
- 1-2 carrots, chopped
Sauce:
- 1 cup peanut butter, crunchy is preferred.
- 1/4 cup soy sauce-
- 1/4 cup yellow mustard (for the tumeric inside)
- hot sauce to taste.
- 1/4 cup honey (if peanut butter was unsweetened)
- 1/4 cup water, if needed
Garnish:
- 1/4 cup chopped cilantro
- 1/4 cup chopped scallion
- Saute onion, garlic, ginger in oil until onion starts to brown
- Stir in veggies, cover, stir occasionally while it cooks on medium heat
- Add all sauce ingredients, whisk, add to veggies, add water as needed
- Simmer uncovered on low for 5 mins
- Check brocolli for doneness
- Garnish with cilantro & scallion
- Serve on rice or greens.
