Chana Masala
Prep time: 15 mins Cooking time: 40-45 mins Serves: 4
Ingredients:
- 2 Onions - sliced finely
- 4 cloves of garlic - chopped finely (or crushed)
- 1 Tbs oil (I use olive)
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp paprika
- 1 Tbs ground cumin
- 1 Tbs ground coriander
- 2 x 14oz cans of chickpeas, drained
- 1 x 14oz can of diced tomatoes, undrained
- 1 tsp garam masala
Instructions:
- heat oil in a medium pan. Add onion & garlic. Cook over medium heat until soft.
- add the chili powder, salt, turmeric, paprika, cumin & coriander. (you might need to add some more oil so that you can get kind of a dry paste). stir over heat for 1 mins.
- add chickpeas & undrained tomatoes. stir until combined. simmer, covered, over low heat for about 10-20 mins, stirring occasionally. stir in garam masala. Simmer, covered, for another 10 mins.
