Beer-battered tilapia!

Ingredients: | |
- 5-6 tilapia fillets, cut in half lengthwise | |
- 1 cup flour, plus more for dredging | |
- 2 tsp salt (maybe a bit more) | |
- 2 tsp garlic powder | |
- 2 tsp onion powder | |
- 2 tsp black pepper | |
- 1 tbsp paprika | |
- dash cayenne | |
- 1 bottle of beer | |
- oil for deep frying | |
Directions: | |
1. Mix flour and spices together. Stir in beer until the batter is a bit thinner | |
than pancake batter. Don't get it perfectly smooth: the lumps will thicken | |
the crust. | |
2. Heat a few inches of oil in either a fryer or deep pot to about 325° F. | |
3. For each strip of fish: pat dry, dredge in plain flour, dip in batter, and | |
place in fryer. While it fries dribble more batter on it and flip it every | |
20 seconds or so. Remove after 3-5 minutes. | |
I used peanut oil, which was a bit pricy but I think had a better flavor, or at | |
least less of a weird smell than vegetable or canola oil does. For the beer, I | |
used a Scuttlebutt Amber, but pretty much any beer should be good. | |
Serve with fries and tarter sauce, naturally. Or malt vinegar. | |
