- Leftover Turkey Carcass and Bones
- 3 Carrots, chopped roughly
- 1/2 Onion, chopped roughly
- 6 Cloves Garlic, peeled
- 1 lb. Leftover Turkey Meat
- 2 cans Black Beans, undrained
- 2 Cans (11oz.) Freeze Packed Corn, drained
- 2 14.5oz cans Diced Tomatoes
- 1 Tbsp Chili Powder
- 1 Tsp. Paprika
- 1 Tsp. Cumin
- 1 Tsp. Oregano
- 1/2 cup Rice
- Place leftover turkey carcass, carrots, onion, and garlic in large stock pot. Cover carcass with water, bring to boil, and simmer for 1-2 hours, or until good looking turkey stock has formed. As water as needed to completely cover carcass.
- Add meat, beans, corn, tomatoes, chili powder, paprika, cumin, and oregano. Continue to simmer until heated through, stirring regularly.
- Add rice. Cook until rice softens, 10-15 minutes. Add water if needed.
