Turkey Tacoish Soup This was what I made with my Thanksgiving turkey leftovers and carcass this year.

Turkey Tacoish Soup

Serves 8

Ingredients

  • Leftover Turkey Carcass and Bones
  • 3 Carrots, chopped roughly
  • 1/2 Onion, chopped roughly
  • 6 Cloves Garlic, peeled
  • 1 lb. Leftover Turkey Meat
  • 2 cans Black Beans, undrained
  • 2 Cans (11oz.) Freeze Packed Corn, drained
  • 2 14.5oz cans Diced Tomatoes
  • 1 Tbsp Chili Powder
  • 1 Tsp. Paprika
  • 1 Tsp. Cumin
  • 1 Tsp. Oregano
  • 1/2 cup Rice

Preparation

  1. Place leftover turkey carcass, carrots, onion, and garlic in large stock pot. Cover carcass with water, bring to boil, and simmer for 1-2 hours, or until good looking turkey stock has formed. As water as needed to completely cover carcass.
  2. Add meat, beans, corn, tomatoes, chili powder, paprika, cumin, and oregano. Continue to simmer until heated through, stirring regularly.
  3. Add rice. Cook until rice softens, 10-15 minutes. Add water if needed.
