# [Easiest Ever Paella][orig]

## Ingredients
Serves 4

| 1 tbsp | olive oil
| 1 large | onion or leek, sliced
| 110g | chorizo sausage, chopped
| 1 tsp | turmeric
| 300g | short-grain white rice
| 1 litre | hot fish or chicken stock
| 200g | frozen peas
| 400g | frozen seafood mix, defrosted
## Basic Method
- Make sure the stock is ready for when you need it
- Heat the oil in a deep frying pan
- Soften the onion for 5 mins without browning
- Add the chorizo and fry until it releases its oils
- Stir in the turmeric and rice until coated by the oils
- Pour in the stock
- Bring to the boil, then simmer for 15 mins, stirring occasionally
- Tip in the peas
- Add the seafood:
+ If pre-cooked, add 5 mins after the peas and cook for 2-3 mins
+ If raw, add at same time as peas and cook for 7-8 mins, until cooked
- Check for seasoning and serve immediately
## Optional Extras
Great with lemon. Serve with lemon wedges on the side.
I usually serve with a loaf of ciabatta, with olive oil and balsamic vinegar
for dipping. Splash the top of the loaf with just a little bit of water (to
keep it moist) and heat for about 8 mins at 160°C. If you use lemon-infused
olive oil, you can forego the lemon wedges.
Peppers will add some crunch, and red or green peppers will add visual colour.
Add them a few minutes after the peas.
If you want it spicier, use some paprika or ground cayenne pepper, and add at
the same time as the turmeric. I use half a teaspoon of cayenne.
