I don't think you'd need this if using raspi-config - I did this work before they added support but from what I've seen the two approaches are a bit different...
Thanks for the script, FYI on the latest "Raspbian GNU/Linux 11 (bullseye)" it doesn't work, because /mnt folder is absent in rootfs. Created the folder and works OK now.

On the latest Raspberry OS Bookworm, I changed this:
rootDev=`awk '$2 == "/" {print $1}' /proc/mounts`
into this:
rootDev=/dev/mmcblk0-p2
The reason is we have /dev/root
in /proc/mounts
for /
and this is not mountable.

Great work! Got any idea in how to put this into an initramfs-tools script? I'm asking because the read-only filesystem option in raspi-config configures/mounts the overlayfs via initramfs-tools scripts. (https://github.com/RPi-Distro/raspi-config/blob/master/raspi-config#L2486)
