2 very ripe bananas | |
3/4 cup sugar | |
1/2 teaspoon baking powder | |
1 teaspoon vanilla | |
1/2 teaspoon baking soda | |
2 eggs (or egg substitute) | |
1/4 teaspoon salt | |
1 teaspoon xantham gum | |
1 1/4 cup brown rice flour | |
1/4 cup vegetable oil | |
Grease pans and preheat oven to 350 degrees F. | |
In a bowl combine bananas, sugar, and vanilla. Mix for 1 minute. | |
Mix together brown rice flour, nuts, baking powder, baking soda, and salt in a large mixing bowl. Stir in banana mixture and the oil. Mix well (not too much though or when baked becomes too dense). If making muffins bake for 35 minutes, 2 loaf (4 x 8 pans) 40 to 50 minutes. |
