3kg pork shoulder, (perhaps 2.5kg after fat/skin trimmed)
Place in the slow cooker:
- 3 medium brown onions, thinly sliced
- 1 tbsp minced garlic
- 1.5 cups chicken stock
- 2 tsp mesquite liquid smoke
- 3 tsp red wine vinegar
Mix rub:
- 1 tbsp dark brown sugar
- 2 tsp extra hot chilli
- 2 tsp cayenne
- 2 tsp smoked paprika
- 1 large chipotle chilli, crushed
- 1 tsp ground cumin
- 0.5 tsp cinnamon
- 0.5 tsp ground ginger
- 4 tsp english mustard powder
- 3 tsp ground black pepper
- 1.5 tsp salt
Trim, then rub the pork with the mix. Place atop onions. Push pork down / add a little water to ensure pork is mostly covered.
Slow cook at high for 3 hrs, then low for 6.
Remove pork to cutting board, remove excess fat. Strain remainder, return solids to the cooker, set aside liquids. Shred pork, return to cooker. Add liquids to achieve desired moisture, reduce liquid for intensity.
