- Papatzules - Pumpkin seed sauce and egg based dish
- Cochinita Pibil - Like pulled pork, but Mexican, and a million times better
- Pan de Cazón - One of those things you can only get in the Mexican southeast: it's a local shark and black bean based specialty
- Relleno negro (Chilmole) - Turkey and a black sauce that's waaay to difficult to describe properly.
- Panuchos - Street food classic. It's a fluffy tortilla filled with refried beans and pork
- Salbutes - Similar to panuchos, but fresher and normally turkey based
- Tamales - Corn based dough steamed in a banana leaf with meat and sauce
- Chilaquiles - The best cure for hangovers ever invented
- Enchiladas - Tortillas, pulled chicken and hot sauce. Simple but always a winner
- Mole - There's a million versions of this. They are all amazing, normally a thick super flavorful sauce served on some kind of meat
- Pipián - A specific kind of mole based on pumpkin seed
- Almendrado - Another kind of mole, this one based on almonds. Tends to be spicier
- Mole negro poblano - The most classic mole, it's considered an untangible heritage of humanity by UNESCO and has like 100 ingredients, including chocolate
- Birria - Slightly spicy goat stew, great for hangovers
- Barbacoa - Slow cooked, steamed mutton. One of my favourites
- Carnitas - Braised pork
- Tacos al pastor - Easy to recognize for their kebab-like way of preparing them, a Mexico City classic that you can find all over the country
- Chapulines - We like insects in Mexico, these are great as bar snacks with some mezcal
- Escamoles - Might be hard to find, but another insect-based dish
- Chincuiles - More insects! These are flying ants
- Aguachile - Lime and chili cured shrimps, VERY spicy
- Huitlacoche - The Mexican truffle, it's a fungus that grows on corn and it's amazing when cooked
- Menudo/pancita - Intenstine soup. It's super tasty though
- Tequila - 'nuff said
- Mezcal - Like tequila, but smokier and a lot more hip these days
- Michelada - Beer cocktail, perfect for a hot day on the beach
- Pulque - Prehispanic alcoholic drink based on the same plant as tequila but fermented instead of distilled, I love it but it's an acquired taste
- Curado - Like pulque, but much more accessible, I'd start here
- Pozol - Maybe hard to find, but a delicious corn based drink
- Horchata - Non alcoholic rice based drink
