1/2 c butter | |
1 1/4 lb grated sweet potato | |
2 1/2 T packed brown sugar | |
1/4 t salt | |
1/4 c tequila | |
juice of 2 limes | |
In a cast iron skillet: | |
* melt butter | |
* stir in sweet potatoes, pat into even layer | |
* sprinkle in brown sugar & salt | |
Transfer to a smoker, smoke for 1 hour (200-220*F) | |
Stir in 3 T of tequila & half the lime juice, pat back down | |
Smoke another 50 - 60 until tender but crisp around edges | |
Remove from smoker and stir in remaining tequila and lime juice. | |
