Bean and Vegetable Burritos

| Ingredients: | |
| * 2 large or 3 small firm, ripe avocados | |
| * 40g sachet guacamole seasoning mix | |
| * 1 tbsp oil | |
| * 1 finely chopped red onion | |
| * 3 finely diced zucchinis | |
| * 2 finely diced red capsicums | |
| * 495g Burrito Kit pack | |
| * juice of 1 lemon | |
| * 435g can of refried beans | |
| * 1 cup grated tasty cheese | |
| Method: | |
| 1. Mash avocado flesh and combine with guacamole seasoning mix. Heat oil in a large non-stick frying pan. Add onion, zucchini and capsicum, then cool until tender. Stir in burrito seasoning mix, .5 cups water, lemon juice and refried beans. Slowly bring to the boil, stirring constantly. Reduct heat and simmer for a few minutes until heated through. | |
| 2. Microwave tortillas in pouch on high/850 W for 1 minute | |
| 3. Spoon bean mixture onto warn tortillas. Top with salsa, cheese and guacamole. |
