Mushroom bun burger
- 1lb grass-fed ground beef
- large portobello mushroom
- onions/tomatoes/lettuce
- garlic/salt/pepper
- oil/ghee
Combine garlic, salt, pepper, beef, and make a patty. Oil cast-iron pan. Sear each side on high heat for 1 minute. Reduce heat and cook each side for an additional 2-3 minutes. Cook mushroom in leftover grease in the pan. Serve burger over mushroom and top with onions/tomato/lettuce. Use lettuce as top bun.

Soak skewers in water. Put meat and alternate vegetables on skewers. Grill or broil.
Flank steak stir-fry

Cut meat into thin slices. Freeze steak for a few minutes before slicing to make it easier. Stir-fry in cast-iron pan.
Liver and Onions

Cut up liver and fry with onions in bacon fat.
Crock Pot: Beef Pot Roast
- beef chuck roast
- carrots
- root veges
- 1 cup beef stock
- thyme
- jalapenos?
- 1 cup red wine
- garlic
- onion
Sear beef on both sides. Add wine and broth to pot. Add beef with crush garlic, thyme, pepper, chopped onions on top. Heat on low for 8 hours. Add carrots and root veges and heat for 2 more hours.
Pan-roasted Dry-aged Ribeye

- shallots
- thyme
- salt/pepper
Pre-heat oven to 400. Put large cast iron pan on high heat. Rub salt on both sides. Rub pepper on both sides. Sear each side for 2 minutes, side for 30 seconds. Place in oven for 8 minutes. Remove and put on low heat. Add butter, garlic, shallots and baste for 2-3 minutes. Remove from pan and let sit for 10 minutes.
Oven broiled Ribeye steak
Wash and dry steak. Put on broiling pan. Rub with salt and pepper. Bring to room temperature. Put oven on broil. Broil for 5 minutes, flip over and cook until internal temp is ~150.
Lamb curry

- 1 cup stock
- 1 can coconut milk
Cut up onion and garlic and cook in pressure cooker in bacon fat. Cut lamb into large pieces and brown. Add stock, curry powder, and veges. Bring to high pressure. Reduce heat maintaining high pressure and cook for 12 minutes. Remove from heat. After pressure subsides add coconut milk and stir.
Roasted Chicken

Bring chicken to room temperature. Heat oven to 450. Put in roasting pan. Sprinkle with salt and pepper. Roast for 1 hour. Let sit for 15 minutes. Baste.
Roasted Broccoli Shrimp
- 1 lb shrimp de-viened and cleaned
- 4 cups broccoli
- coriander
- cumin
- chili pepper
- black pepper
- 1/4 cup olive oil
- lemon zest
Preheat oven to 425. Mix broccoli, spices, and oil in a bowl. Mix shrimp, lemon zest, black pepper, and rest of oil in another bowl. Roast broccoli for 10 min. Stir in shrimp and roast another 10 minutes, stirring in once in between. Serve with cauliflower rice.
Sri Lankan Fish curry
- 1lb firm fish, ie: tuna steak
- tumeric
- curry powder
- 1 red onion
- 3 cups coconut cream
- 1 tomato
- 10 fresh green chillis
- 10 curry leaves
Rinse fish in cold water and pat dry. Dice tuna into chucks. Mix all other ingredients in a bowl. Cook over high heat for 10 minutes.
Scallops, Mussels, Clams in Garlic Butter

Heat large pot. Throw in clams and mussels and cover. Saute garlic in butter in a separate pan. Shellfish are done when they open, around 2 minutes. Add scallops to garlic butter pan.
Sri Lankan Curried Meatballs
- 1.5 lb ground beef
- onion
- salt / pepper
- garlic
- add spices and egg?
- 2+ cups coconut milk
- chili powder
- roasted curry powder
- curry powder
- curry leaves
- piece of cinnamon
Mix together and make balls the size of a small lime. Saute onions in oil. When it's golden brown, add curry leaves. Then add coconut milk, chili powder, curry powder, cinnamon and bring to a boil. Add raw meatballs one at a time. Remove from fire and add roasted curry powder. Serve with cauliflower rice.
