Add your old paths
/old-path-from-old-site
in the old link field and the new path
/new-path-in-new-site
in the new link fields. Title and Section are there for your organization and convenience.
301 Redirects works automatically by redirecting users from your old links to your new ones.

Pretty hacky solution. This lets you put something like the following in the "Old link" field:

/pages/(.*)

And then put a full URL (must include the http:// bit) with a $1 replacement in the "New link" field:

http://archived-site.example.com/pages/$1

It detects a potential regular expression by looking for .* in the old link field.
