- 4 wrapped packages of soba noodles. There are usually 3 in a big package
- 1/2 cucumber
- 1 red pepper
- 3 medium carrots
- 2/3 cup chopped cilantro
- 2/3 cup chopped thai basil
- 1/2 cup soy sauce
- 1/3 cup red wine vinegar
- 3 Tbsp olive oil
- 1 small clove garlic crushed
- 1/2 cup peanut butter
- 2 teaspoon chili garlic paste
- 1 Tbsp water
- Ginger juice (squeeze a chunk of ginger in the garlic press--add in the juice and any crushsed ginger that comes out.)
- Boil soba noodles. When done, rinse under cold water and let cool.
- Julienne cucumber and red pepper. Grate carrot.
- Blend all peanut sauce ingredients in blender.
- Once soba noodles are cool, add peanut sauce and all the vegetables/herbs. Be sure the noodles have cooled before adding sauce or it will cook.
