add to ~/.vimrc: set mouse-=a
my ~/.vimrc for preserving global defaults and only changing one option:
source $VIMRUNTIME/defaults.vim
set mouse-=a

Doesn't work in Ubuntu 26.04 anymore

You need to disable the defaults:

let g:skip_defaults_vim = 1
set mouse=
