my custom recipes - pav bhaji
boil any vegetables you like until very tender (till they can be mashed easily)
(tradtional version always contains potatoes, cauliflower and green peas).
Add 1-2 table spoons of oil.
Add cumin seeds.
Add 1-2 red onions and fry till golden.
Add 1 table spoon of ground ginger.
Add 1 table spoon of ground garlic.
Add 1-2 green chilies.
Add 1 teaspoon of cumin powder.
Fry till you lose the raw garlic smell.
Add 1 can of tomatoes.
Add 2-3 tablespoons of pav bhaji masala.
Add a little bit of water if not using canned tomatoes so that the masala doesn't burn.
Cook for 2-3 minutes.
Then add the boil vegetables and mash them really well to the point where you can't distinguish the veggies.
Add water if required.
Add a table spoon of butter(optional).
Cook for anotherr 2-3 minutes.
Add freshly cut coriander and finely chopped red onions.
for the bread:
Add a table spoon of butter.
Add half a spoon of above curry to hot pan with butter.
Toast the bread on the pan with the butter-curry mixture till golden.
Squeeze lime of curry before serving.
