boil any vegetables you like until very tender (till they can be mashed easily) | |
(tradtional version always contains potatoes, cauliflower and green peas). | |
Add 1-2 table spoons of oil. | |
Add cumin seeds. | |
Add 1-2 red onions and fry till golden. | |
Add 1 table spoon of ground ginger. | |
Add 1 table spoon of ground garlic. | |
Add 1-2 green chilies. | |
Add 1 teaspoon of cumin powder. | |
Fry till you lose the raw garlic smell. | |
Add 1 can of tomatoes. | |
Add 2-3 tablespoons of pav bhaji masala. | |
Add a little bit of water if not using canned tomatoes so that the masala doesn't burn. | |
Cook for 2-3 minutes. | |
Then add the boil vegetables and mash them really well to the point where you can't distinguish the veggies. | |
Add water if required. | |
Add a table spoon of butter(optional). | |
Cook for anotherr 2-3 minutes. | |
Add freshly cut coriander and finely chopped red onions. | |
for the bread: | |
Add a table spoon of butter. | |
Add half a spoon of above curry to hot pan with butter. | |
Toast the bread on the pan with the butter-curry mixture till golden. | |
Squeeze lime of curry before serving. |
