1 pineapple

1 bottle of beer

1/4 cup vinegar

2 pounds of pork (loin, shoulder or butt)

1/2 cup onion

1 pasillo chile

1 guajillo chile

1 teaspoon cumin

1 1/2 teaspoons Mexican oregano

1 tablespoon Achiote powder

2 1/2 teaspoons salt

1 1/2 teaspoons minced garlic
- chop onion
- prep pineapple
- slice off the sides into 2-inch-wide strips, rinse and save 3 to 4
- cut in half
- core and dice one half into ½-inch pieces
- slice the rest into ¼-inch rounds
- dump shit into crockpot (everything except the half of the pineapple you cut into rounds)
- cover with pineapple strips
- cook on high for 5 hours
- eat it, fool! (with some cilantro and biz)
